Lazy Sunday


I’ve enjoyed my lazy Sunday. It started off with sleeping in late. I woke up to my mum and brother’s cats staring at me, waiting for some love and attention!

I spent most of the day relaxing and hanging with the family. I made a yummy veggie sandwich for lunch which was made with a bunch of veggies and Veganaise. This is the best spread for sandwiches, pasta, and veggies. It tastes better than mayonnaise. I paired my sandwich with Trader Joes Vegetable Chips and they’re the kind where you can’t eat just one.


My mum and I went for another 40 minute walk in the afternoon, but the sun was still really strong so we were exhausted once we got back. By the time I headed home from my mum’s house it was dinnertime. After taking care of my cats, who were thrilled to see me walk through the door, I was too tired to make something elaborate. I quickly put together a pizza. I figured I could have some now and then the rest for lunch tomorrow. So one meal became two and I didn’t have to do too much heavy lifting. 


The crust is from Trader Joes and I add shallot, garlic, olive oil, cheese, and tomatoes. The bananas I bought for the week are bright yellow so I decided to have that for dessert, except I wanted to do something different. So I made one of my favorite smoothies... 

Chocolate Banana Smoothie, which is made with soymilk, a banana, and 2 tbsp of unsweetened cocoa powder.

Mother’s Day Celebration


Even though it’s Saturday I set my alarm to get up early, or at least to keep myself from sleeping until noon. I roused my mum from her coffee and we went for a 40 minute walk around her neighborhood. Along our usual route, we end up at a beautiful park with a fountain. The ducks were enjoying a lovely mid-morning bath.


The flowers were in full bloom and wrapped around the edge of the park.
 

By the time my mum and I got back and showered, it was noon. So I whipped up some cinnamon oatmeal and made a fruit salad of organic strawberries and mango slices. 


We relaxed for a while and caught up on last week’s episode of Grey’s Anatomy. With one more episode left and a few main characters leaving, we were on the edge of our seats. This week’s show made me jump up with arms waving wildly in the air! Those writers love making a lot of drama and they ended the show with a huge cliffhanger. All that excitement made me hungry for lunch. I put together a peanut butter sandwich, carrot sticks, and grabbed a handful of almonds. 


Some of my readers noticed I eat a lot of peanut butter sandwiches. The Teddie brand that I buy came out with an organic line and it is so delicious! I can’t get enough of it!


The beautiful, spring weather and the walk from this morning was energizing. So my mum, Katie, and I headed downtown to check out what the other locals were up to. The streets were bustling with people. Children were running around, skateboarders were rolling down the sidewalks, and the buskers were strumming their guitars. We walked along the water on the boardwalk.


When we got back from our excursion, my brother came up from Rhode Island. He brought with him Zeus, his shy, black cat. The mother’s day celebration had finally begun! Katie and I cooked one of my new recipes. 


The dish has whole wheat angel hair pasta, a bunch of veggies, and tomatoes for a sauce. The meat eaters added chicken that Katie sautéed in a pan. 

Every special dinner needs a yummy dessert to end the meal:  Alden’s Organic Chocolate, Chocolate Chip ice cream with fresh organic strawberries.


Off to hang with the family.

You Gotta Fight for Your Right to Partay!


The sun greeted me this morning and along with it came a buzzing on my windowsill.  When I opened up my curtains I found two yellow jackets sunning themselves. Now, I’m not one of those people who can be easily spooked by insects. I don’t mind taking care of (killing) ants or house flys. Spiders are like friends, always welcome and always saved from the cats swatting paws. The only reason they’re spared is because they eat my mortal enemy…mosquitos. But when I meet up with anyone from the bee family, I run and scream like a little girl! 

Today was a chaotic day for trying to eat meals. I packed cinnamon oatmeal and orange slices to eat at my desk while reading the morning emails.  I went on another coffee run for lunch, so by the time I got back I scoffed down my peanut butter sandwich and Kale salad. And as I am writing this blog (at 9pm), I am inhaling my dinner of pasta and veggies. I’m glad I went for the coffee though. Starbucks was brewing an Espresso Roast and it was divine! The taste was robust, nutty, and as smooth as you would expect an espresso to be. It was so strong that it has kept me buzzing all day!


This Friday night is right for partying! As soon as 5:30pm came around, I raced out of work, packed my kitchen and personal things into my Hyundai, and headed north to my mum’s house. Even though I am running on 4 hours sleep, get-togethers with the family are always a blast.

As soon as I walked in the door my fashionista sister was obsessed with the construction of my shirt. 


Suddenly the tunes from my mum’s ipod start to grow louder and dancing in the kitchen has started.


Time to show them how it’s done! Have a fun Friday night!
