"Singin' (walking) in the Rain!"


I pushed myself out of bed before the sun came up this morning. I got all ready to walk and as I stepped outside the door I was bombarded with pouring rain! There was no way I was getting up for nothing so I grabbed an umbrella and trekked through the apartment complex for 30 minutes. It was actually a nice walk, but exhausting. My muscles are not used to this much movement quite yet!

When I got back in I made myself a hearty breakfast of oatmeal with strawberries. I buy the rolled oats instead of the instant kind because they haven’t been processed so much that they’ve lost their nutrients. To make the dish healthier and heartier I add a tbsp. of wheat germ and a tbsp. of ground flaxseed. The wheat germ has folic acid (part of the B vitamin family) and B vitamins increase your good mood!  I add the flaxseed because the omega-3’s in it actually help with seasonal allergies.

The rain kept me inside at lunch so I ate at my desk. I enjoyed a quick Kale salad, a peanut butter sandwich, and soymilk. With my ipod on shuffle I sat and read the last of my book (highly recommended if you are looking for something to read, the author’s descriptions are beautiful).


After a chaotic day at work I was in need of some comfort food, so I made my favorite Macaroni and Cheese.  I buy it from Trader Joes so it is made with all natural ingredients and I add stuff to it to make it more filling and tasty. 


I boil the noodles and add soymilk, vegan margarine, kale, a pinch of cayenne pepper for a kick, and marjoram to bring out the flavor of the Kale. Yummy!

Well off to brew up a lovely cup of decaf coffee. This chilly, rainy weather makes me want to cozy up on my couch with a hot beverage.
