A Slow Going Saturday


I love Saturdays. I sleep in and relax with a cup of coffee for a few hours, which I don’t get to do during the week. Usually I take my coffee in a to-go mug and drink it at my desk at work. On Saturdays in the summer waking up with the sun blazing into your window, heating up the room like you’re in a sauna is quite the wakeup call. This morning it was cloudy and stormy, so waking up felt peaceful because it was dark even at 11:30am. 

My mum texted me soon after and I realized she was stopping by today. My sister and I aren’t neat freaks. We keep things a bit tidy but not overkill. When we got the definite okay that my mum was coming to visit, we took a look around and realized the place was more than messy. It’s a wonder what an hour of cleaning will do to make the place feel fresh. We always enjoy my mum’s visits. Our chats bounced around between purses and shoes and my sister’s business trip she is going on next week. She’ll be gone for a few weeks and she started to realize that she would miss our American cuisine. So this week I am making her some classic dishes that she loves. 

Tonight I made her baked soy creamy macaroni and cheese. The only dairy in it is from the yellow cheddar cheese I got from Whole Foods. I use vegan margarine and soymilk to create the sauce. It came out really good. It’s definitely a comfort food because it’s filling and makes you feel content afterward. I needed something warm and comforting. My sister and I got caught out in a downpour of rain and we got soaked. Now I’m enjoying a lovely cup of English breakfast tea and watching the first season of an Idiot Abroad. 

I need to sort out my exercise schedule for the next couple weeks to reinforce a more active lifestyle. I’m thinking of getting one of those gadgets on Amazon that track how many miles you walk and calories burned, etc. More to come, but for now I’m going to go relax. My mind has that weekend fuzziness, definitely not feeling sharp today!


In Whole Foods today they had these mango pluots for sale. They are from a local farm, taste similar to plums but they definitely have that lovely mango flavor. I love finding new and interesting food items. It mixes things up a bit to try something new and different.
