Gorgonzola Apple-Nut Salad


Every week I try to make one new meal or reinvent a meal to keep my taste buds guessing. This week I was inspired by a salad recipe I found hanging up in Whole Foods. The flavors in the recipe are perfectly balanced. I use romaine lettuce because it’s such a hearty green leaf that is very filling. I looked for a granny smith apple but it was not available this week, so I went with the luscious-looking pink lady apple. It’s the perfect blend of sweetness because it’s not overpowering. I chose walnuts because it pairs well with the taste of Gorgonzola cheese.  The salad would not be complete without the Gorgonzola cheese. It’s the kind of cheese that you either like it or hate it. There is no in between. It has a very strong flavor profile and stands out in any dish it’s put in. 

It’s a really quick meal to throw together and is light and refreshing. It was the perfect way to end my Monday.

Gorgonzola Apple-Nut Salad
1 serving

2 c. Romaine Lettuce, chopped
½  Apple, chopped
¼ c. Walnuts, chopped
¼ c. Gorgonzola Cheese, organic crumbled
1 tbsp Balsamic Vinaigrette

Chop up all the ingredients and arrange on a plate. Take the other half of the apple and cut into sticks. Eat as a snack or pair it up later with peanut butter.

I was up so late last night finishing my homemade spaghetti sauce that I only got about 5 hours of sleep. Needless to say I could not get myself out of bed to walk. So I had to rearrange my exercise schedule. This time I took into account what was going on this week so I’m hoping I can stick to it.
